Freezing Tips
Fieldstone breads
freeze well for up to 3 months.
To freeze our bread, wrap
tightly in a heavy plastic bag
prior to freezing. To refresh,
thaw in unopened bag. Remove
from bag and refresh in a
preheated 375 degree F oven for
approximately 10 minutes.
Storage Tips
Naturally
leavened breads retain their
moisture longer than yeast
breads, which can become dry and
stale quite quickly.
Furthermore, moisture retention
is enhanced by the thick crust,
which is a natural protective
cover that seals in freshness.
Fieldstone breads
retain their qualities best in
paper bags to maintain the
crusty crust.
Once sliced,
bread should be placed face down
on a cutting board and covered
with a tea towel. Bread will
stale quicker in the
refrigerator because of the
drier air.
The use of
plastic bags for storing will
soften the crust, promote
condensation, and alter the
texture of the bread, and is
thus not recommended.
